Avocado, Chocolate & Olive Oil Cupcakes w/ Avo Glaze


  • 1 1/2 cups all purpose flour
  • 3/4 cup cocoa powder (unsweetened)
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 ripe avocado, peeled & diced
  • 1 cup honey
  • 3/4 cup non-dairy milk
  • 1/3 cup olive oil
  • 2 tsp vanilla extract
  • Avocado Glaze Ingredients:
  • 1 ripe avocado, peeled & diced
  • 4 ounces white chocolate (vegan), melted
  • 2 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt

  1. Preheat oven to 350F.
  2. In a large bowl, whisk the flour, cocoa, baking powder, baking soda and salt.
  3. Add the diced avocado in a blender and process until smooth.
  4. Add the milk, honey, olive oil, vanilla extract and process until well blended and creamy.
  5. Pour the avocado-olive mixture into the flour mixture and whisk until blended.
  6. Scoop spoonfuls of batter into a lined 12 cup muffin tray.
  7. Bake for 25 minutes or until a tooth pick inserted in the center comes out almost clean with only a few attached crumbs. Remove from oven and set aside to cool.
  8. To prepare the avocado glaze, process the diced avocado, honey, salt and vanilla extract in a blender until smooth. Pour in the melted chocolate and process until smooth. Pour glaze into a small bowl and dip cupcake tops in it. Serve.
