Get ready for a deconstructed cake pop shooter made with layers of a strawberry shortcake-vanilla frosting cake, white chocolate chips, strawberries, and strawberry whipped cream. These incorporate amazing texture and taste of a cake pop mixed with the crunch of chocolate chips and the fresh taste of strawberries. A fun twist on a popular dessert!

Ingredients
  • For the cake pop "batter":
  • 1 box yellow cake mix, plus the ingredients listed on the box
  • 1 box instant vanilla pudding mix
  • 4 tbsp sprinkles
  • 1/2 cup Marzetti strawberry gel
  • For the frosting:
  • 1 cup (2 sticks) butter
  • 4 cups powdered sugar
  • 1 tsp vanilla
  • 2-3 tbsp water
  • For the whipped cream:
  • 2 1/2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp strawberry extract
  • For the layers:
  • 1 pint strawberries, chopped
  • 1 bag white chocolate chips

Instructions
  1. For the cake:
  2. Preheat oven to 350 degrees and spray a 13 x 9 pan with cooking spray. 
  3. In a large bowl, combine the yellow cake mix plus the ingredients listed on the box, pudding mix, and sprinkles. Bake according to package directions and then let cool. 
  4. For the frosting:
  5. In a large bowl, cream the butter until smooth. Add in 2 cups of powdered sugar and continue to mix. Add in 2 tbsp of water and vanilla. Mix, and then add the additional 2 cups of powdered sugar. Mix until smooth. If the frosting is too thick, add in 1 additional tbsp of water. 
  6. When your cake is cooled, stir the frosting into the cake until it's completely combined. You can use your hands to get it fully distributed like you would a meatloaf. Stir in the strawberry gel until mixed throughout the batter. 
  7. Put the mixture into the refrigerator for at least an hour. 
  8. For the whipped cream:
  9. In a large mixing bowl with a hand mixer, or with a standing mixer, beat the whipping cream until bubbly. Add in the vanilla extract, powdered sugar, and food coloring. Mix until stiff peaks form. You can transfer the whipped cream to a piping bag if desired. 
  10. Assembly:
  11. Chop the strawberries if you haven't already. Spread out all of your shooter glasses. 
  12. At the bottom of each shooter glass/cup, put a scoop of the cake pop mixture. I used a rounded melon baller. Top that with about 4-5 white chocolate chips and then about 1 tsp of chopped strawberries. Repeat the layers. 
  13. Top with a swirl of the strawberry whipped cream. Once they are all complete, store them in the refrigerator until serving. 
Recipe Notes
You may have leftover white chocolate chips and strawberries depending on how heavy you layer your shooters.
